Brut Tradition

Harmony and balance

This champagne of character, harmoniously combining the three Champagne grape varieties, Chardonnay, Pinot Noir and Meunier, is the emblematic cuvée of our House and reveals its entire personality.

Blending and ageing: 50% Meunier, 30% Chardonnay and 20% Pinot Noir. This blend includes 25 to 30% of reserve wines in order to preserve a constant quality. This cuvée has a minimum ageing time of 3 years in cellars.
Tasting: The Cuvée Brut reveals a golden colour with a fine cordon of bubbles. The fine and fruity nose reveals lemony and toasted notes. The palate is powerful and robust with great freshness and length.
Food and wine pairings: This fruity champagne is the ideal companion for an aperitif but will be enjoyed with pleasure throughout a meal.

Demi-sec

Softness and voluptuousness

This champagne in only sweet and pleasure to pair with fruity desserts with delicacy.

Blending and ageing: 50% Meunier, 30% Chardonnay and 20% Pinot Noir. This blend includes 25 to 30% of reserve wines in order to preserve a constant quality. This cuvee has a minimum ageing time of 3 years in cellars.
Tasting: The cuvee Demi-Sec reveals a golden colour with fine bubbles. The nose expresses aromas of figs. The mouth plays on juicy fruit aromas (pear, peach) and floral notes.
Food and wine pairings: This champagne will be perfect with all desserts such as a fine apple pie or roasted figs with honey. Also perfect in summer time as a cocktail with a few slices of lime and mint leaves.

Brut Rosé

Delicacy and elegance

This rosé champagne seduces with its sparkling pink colour and its delicacy.

Blending and ageing: 50% Pinot Noir (a part of which is vinified as red wine), 40% Chardonnay et 10% Meunier. This blended rosé champagne includes 20 to 25% of reserve wines in order to preserve a constant quality. This cuvée has a minimum ageing time of 3 years in cellars.
Tasting: The Brut Rosé reveals a pretty salmon pink colour. The nose expresses notes of red fruits. The palate, full of elegance, is smooth and fruity.
Food and wine pairings: This gourmet champagne is the perfect accompaniment to desserts based on red fruits such as a raspberry macaroon. Don’t hesitate to dip the inevitable pink biscuit of Reims in it.
The unexpected pairing : to try with sushi and sashimi.

Prestige Premier Cru

The jewel of our House, this champagne is the result of a subtle blend of the three Champagne grape varieties, Chardonnay, Pinot Noir and Meunier. It is the very expression of the Premier Cru terroir of Hautvillers. Our Prestige Premier Cru cuvée is sublimated by a packaging representing the sign that adorns our House.

Blending and ageing: 40% Chardonnay, 40% Pinot noir and 20% Meunier. This blend includes 10% of reserve wines in order to preserve a constant quality. This cuvee has a minimum ageing time of 4 years in cellars.
Tasting: The Prestige 1er Cru cuvée reveals a golden colour with a fine cordon of bubbles. The powerful and fruity nose expresses the mineral and floral notes of chardonnay. The palate, very delicate, reveals rich and gourmet aromatic nuances.
Food and wine pairings: This elegant champagne will make tasting it a moment of dream and pleasure and will go delightfully well with gravlax salmon or roasted prawns with crunchy vegetables.

Blanc de Blancs Premier Cru

Finesse and purity

This champagne of rare finesse is made exclusively from the white Champagne grape variety, Chardonnay, which gives it its name Blanc de Blancs.

Blending and ageing: 100 % Chardonnay in Premier Cru. This champagne, produced in limited quantities, benefits from an ageing time of at least 5 years in the cellars.
Tasting: The fine mousse with delicate bubbles elegantly accompanies the luminous white gold reflections of the robe. The nose is very light with notes of white flowers and infusion of verbena and lime blossom. The palate, with finesse and lightness, plays on the aromas of citrus fruits and lime. A very nice balance and a long finish.
Food and wine pairings: The Blanc de Blancs will enhance seafood, fish and poultry.

Vintage 2016 Premier Cru

Intensity and freshness

After a year of contrasts, the 2016 Premier Cru harvest produced grapes of excellent ripeness.

Blending and ageing: 60% Pinot Noir and 40% Chardonnay in Premier Cru from the 2016 harvest. This champagne, produced in limited quantities, has aged for more than 6 years in our cellars.
Tasting: The colour is a beautiful golden yellow with brown highlights. The nose is frank, fruity and tonic. The palate is lively and juicy with citrus fruit and minerality. The low dosage creates a stimulating harmony.
Food and wine pairings: An airy champagne to be enjoyed with carpaccios, both fish and meat. Raw fish, sushi and sashimi are also excellent partners.

Vintage 2012 Premier Cru

Intensity and seduction

This champagne is a cuvée full of charm and fullness.
2012 is one of the great vintages of the Champagne region.

Blending and ageing: 60% Pinot Noir and 40% Chardonnay in Premier Cru from the exceptional 2012 vintage. This champagne, produced in limited quantities, has been aged for more than 8 years in the cellar.
Tasting: The 2012 Premier Cru vintage reveals a luminous colour with a fine and lively effervescence and a nose with notes of butter and honey. The palate is fresh with great complexity and reveals aromas of jam, rhubarb and candied fruits. The wine expresses well the sunny side of the 2012 vintage with a very assertive fruitiness. The finish is very tender with great length.
Food and wine pairings: This cuvée will be the perfect accompaniment to capon with morel mushrooms, a chicken stuffed with foie gras or a poultry supreme.

Ratafia champenois

The ratafia (18° vol.) is a traditional Champagne aperitif to be discovered without delay.

Blending and ageing: The ratafia champenois is made at the harvest by blending Chardonnay, Pinot Noir and Meunier grape musts and alcohol. It is then aged in oak barrels for three years, which gives it its beautiful amber colour and aromas of candied fruit.
Tasting: With a beautiful amber colour, the ratafia reveals aromas of dried grapes, vanilla and candied orange on the nose. The palate is greedy and tart with notes of candied apricot, stewed white fruit and spices.
Food and wine pairing: Traditionally served as an aperitif, ratafia goes perfectly with melon, Serrano ham, foie gras, cheeses and sublimates the fondant of chocolate desserts.
